Espresso Peanut Butter Energy Bites
“All my bags are packed and I’m ready to go~”
Which is actually really weird because I’m usually a last-minute packer. Whenever we travel, Kyle would be packed a week before we leave, and I’d be like “ehhh… I got time.” And I’ll pack the day before we leave.
This time, surprisingly, it’s the other way round. And of course, seeing me packed, Kyle is freaking out! :p
I’m so excited that we get to travel AND come back together, leaving no one behind. Also this time, I’m bring some snacks with us!
Espresso peanut butter energy bites! It’s like everything that I love (almost) pressed into one ball! And you all know how much I love my maca, I had to add some maca for more energy boost!

Perfect travel snack.
1/2 cup creamy peanut butter
1/4 cup maple syrup
2 tablespoons protein
1 1/4 cup gluten-free rolled oats
2 1/2 tablespoons flaxmeal
2 tablespoons chia seeds
1 tablespoon maca powder (optional)
2 teaspoons espresso powder
- Place all ingredients into a large mixing bowl. Mix well until combined.
- With a #100 disher, or 1 tablespoon, scoop dough and roll into a ball. Repeat until all the dough is used up.
- Enjoy immediately or store in an air-tight container and refrigerate.
